I just can&#8217;t withstand a nice piece of cake, a cupcake or cookie. Most of the time I try to take my time when baking and come up with something special &#8211; then there are those days however when I&#8217;m just in the mood for something quick and simple. You know, those recipes whip up with all the essentials you have in your fridge and pantry. So when hen I came up across this recipe of soft Amish sugar cookies I just had to try it.<\/p>\n\n\n\n<p>I was also kind of intrigued by the name &#8211; and what is so Amish about these cookies? When I think of them I always imagine very quiet people living a life way past before our modern days. I think of funny episodes from Sex and the City or 2 Broke Girls. But I never really think of food and indulgence. The whole pious culture seems so devoid of any earthly fun.<\/p>\n\n\n\n<p>The cookies however turned out to be a huge hit with my friends and colleagues. The recipe actually had me baking three full trays so I had enough to bring two full containers to work. They were light and sweet and just the perfect little afternoon treat. I think it&#8217;s their simplicity and no fancy approach that makes them a little Amish. And I think we all need a lillte bit more sweet simplicity in our lives!<\/p>\n\n\n\n<p>TOTAL TIME: Prep: 10 min. Bake: 10 min.\/batch<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul><li>220 gr. butter, softened<\/li><li>225 ml vegetable oil (I used melted butter once; this gives the cookies more of a crumbly soft texture)<\/li><li>220 gr. sugar<\/li><li>220 gr. confectioners&#8217; sugar<\/li><li>2 large eggs<\/li><li>1 teaspoon vanilla or vanilla sugar<\/li><li>560 gr. all-purpose flour<\/li><li>1 teaspoon baking soda<\/li><li>1 teaspoon cream of tartar<\/li><li>Sprinkles optional<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol><li>In a large mixing bowl, beat the butter, oil and sugars. Gradually beat in eggs until well blended. Beat in vanilla. Combine the flour, baking soda and cream of tartar; gradually add to creamed mixture.<\/li><li>Using a small ice cream scoop drop dough onto ungreased baking sheets. Put some sprinkles on them if you like. Bake at 160\u00b0C for 8-10 minutes or until lightly browned. Be sure not to overbake them. Remove to wire racks to cool.
